HIRING REQUIREMENTS

  • Minimum of 1-year culinary experience on an ultra-luxury Cruise Ship, Private Club, Boutique Hotel, ultra-luxury Hotel or Resort
  • Knowledge of all basic cooking techniques and skills including:
  • Knife skills, basic cuts, all cooking methods
  • Knowledge of basic equipment including steamer, fryer, kettles, robocoup
  • Basic understanding of herbs, spices, and various flavoring ingredients

Responsibilities
  • Strictly adheres to all recipes, methods and instructions from supervisor
  • Maintains an organized and efficient flow of production, with regards to changes in forecasts and menus
  • Assists the Assistant Chef de Partie or Sous Chef in maintaining standards in the galley
  • Consistently checks temperatures in foods and follows proper procedures regarding chilling, re-heating, and holding food
  • Checks station prior to leaving to ensure cleanliness, proper disposal/removal of food, and proper storing and labeling
  • Adhere to all SOP’s and participates in the ongoing creation of SOPs relevant to their area of responsibility
  • Ensure that all areas are maintained in accordance with Company policy, Public Health (HACCP), SMS, safety and environmental regulations
