JOB SUMMARY: The Food Production Associate is responsible for effectively performing all the required duties of the position accurately, thoroughly, and safely while following all HACCP and GMP procedures. Place meat products into the proper smokehouse. Maintain all required control, set points, and temperature per smokehouse. Correctly measure and place liquid smoke into the proper tank unit. Connect tank unit to correct smokehouse. Ensure Critical Control Points (CCPs) are met Complete all necessary record keeping to include HACCP and tracking tickets. Verification of time and temperature as needed for HACCP documents. Communicate with packaging associates as needed to provide notification of the cook cycle ending. Must be HACCP certified. Must follow all HACCP and GMP procedures. Self-starter capable of working on their own with limited supervision. High school diploma or equivalent with relevant experience. Ability to read, write, and speak basic English. Must be able to stand on your feet for up to 8 -9 hours a day. Must be able to work in 30-degree temperatures for long periods of time. Must be able to lift up to 100 pounds. Must have good hand and eye coordination. Ability to work 40+ hours per week and overtime if necessary. Attention to detail.
