Aki Sushi Zug – Assistant Cook / Sushi Bar & Kitchen

The Restaurant

Aki Sushi is an authentic Japanese restaurant in Zug, privately owned and operated by a Japanese owner.

We offer high-quality Japanese cuisine and authentic Edomae-style sushi, using carefully selected ingredients and maintaining a high standard of preparation, presentation and service.

We are looking for a reliable and experienced Assistant Cook to support both our Kitchen and Sushi Bar.

Job Title

Assistant Cook – Kitchen & Sushi Bar

Your Responsibilities

  • Preparation and mise en place for the kitchen and sushi bar
  • Supporting the Sushi Chef with daily preparation
  • Preparation of sushi rice, seafood, vegetables, eggs and other ingredients
  • Assisting with hot kitchen preparation and cooking
  • Maintaining high standards of hygiene, cleanliness and food safety
  • Supporting smooth daily kitchen operations
  • Following recipes, preparation standards and instructions accurately
  • Working carefully with high-quality ingredients
  • Supporting the team during busy lunch and dinner services

Candidate Requirements

  • Minimum 7 years of professional experience in Japanese restaurants
  • Solid experience in Japanese cuisine and sushi preparation
  • Good practical knife skills and strong understanding of mise en place
  • Experience working with high-quality ingredients
  • High attention to detail, cleanliness and presentation
  • Reliable, responsible and able to work as part of a professional team
  • Good English and either German or Japanese
  • Willingness to work both in the kitchen and at the sushi bar
  • Professional appearance and attitude
  • Swiss passport, EU passport, or a valid Swiss B or C residence/work permit
