Description Assisting the Director of Food and Beverage in managing the restaurant and beverage departments in a cost effective manner in accordance with the objectives of the organization. Coordinate restaurant and beverage operations with kitchen operations and the Chef. Pay Range: $60k /Yearly ESSENTIAL JOB FUNCTIONS: The duties listed below are examples of the work typically performed by an employee in this position. An employee may not be assigned all duties listed and may be assigned duties which are not listed below. Marginal duties (shown in italics) are those which are least likely to be essential functions for this position. 1. Final Approvals of schedules for restaurant, kitchen and beverage staff. 2. Ensure proper staffing for restaurant, kitchen and beverage operations at all times. 3. Determine that food quality is in accordance with company standards and with the Chef. 4. Ensure that all food is priced within competitive operations and for kitchen operations in coordination with the Chef. 5. Control costs within budgetary guidelines for restaurant and beverage departments. Provide monitoring of costs for all food and beverage operations. Conduct scheduled inventories to determine usage and expenses. Maintain adequate inventory to ensure proper supplies to meet company needs for the restaurant and beverage departments. Be proficient in Time-Keeping systems. Assume assisting Director for menu preparation in coordination with the Chef. Conduct periodic Food and Beverage meetings as indicated by management or when necessary. Assist as communicator or resolution of differences between the restaurant and kitchen. Ensure all restaurant and beverage departments meet or exceed all state and federal requirements. Ensure completion and passage of all inspections including: MSDS, OSHA, and Safety Material. Provide training for all restaurant, kitchen and beverage employees on a continual basis. Performs related and/or other duties as required. Requirements Excellent interpersonal skills is required. College degree preferred. Ten years or more experience as a Food and Beverage Manager, or equivalent experience. Experience should include managing a high volume restaurant and beverage department. Manager ServSafe Certified. Possess a Bar Card. Possess a Nevada State Gaming Card.
