Description

At Coffi Lab, we are dedicated to bringing the best quality products to our neighbourhoods and with that goal in mind have invested in our very own central production unit in Cardiff with in house artisan bakery.
We are excited to now open applications for an Assistant Lead Baker. This role benefits from daytime working hours.
Supported by an experienced and creative team, our successful candidate will often be the senior baker on shift providing only the most delicious bakes across our growing group of Labs.
The salary for this position is £14.00 ph.

A typical day will include:

  • The planning and execution of production schedules with senior managers.
  • Mix, shape, bake and decorate a range of specialist viennoiserie with care and consistency.
  • Place stock orders from suppliers accounting for waste as necessary throughout production.
  • Assist your larger Coffi Lab Kitchen team as needed in other production and the packing/management of outgoing orders.
  • Assist in the training of other staff on bakery lines.
  • Assist in new product development testing as needed.
  • Maintain quality control in the bakery, making certain that our menu items are made to spec and with the upmost care- every time.
  • Managing high levels of food safety compliance and helping ensure all relevant production and traceability paperwork is completed and well as helping ensure our company Health and Safety guidelines are practiced.

The ideal candidates will be:

  • Focused and detail oriented with an ability to work on your own initiative.
  • Extensive knowledge of mixing, shaping and baking artisan breads as well as a knowledge of pastry production and laminated doughs preferably with experience of working with vegan doughs.
  • When on shift you will have ultimate responsibility of the bakery so must have a positive, problem solving and mature attitude.
  • 2 years experience within a bakery setting is preferred, along with Food Safety Level 2 (or equivalent).
  • Bakery NVQ Level 2 Diploma is beneficial.
