Coyote Ugly Saloon is opening in Edinburgh – and we’re looking for a driven, sales-focused Assistant Manager to help lead our brand-new 350+ capacity venue to success. This is your chance to be part of an iconic brand launch, working side-by-side with the General Manager to deliver record-breaking sales, unforgettable nights, and a team that’s second to none.
We need an Assistant Manager who thrives in a high-energy, high-volume environment, can motivate a large team, and has the commercial edge to help smash targets. From driving promotions to ensuring exceptional service, you’ll be key to making Coyote Ugly Edinburgh the hottest spot in the city.

Essential Skills & Experience:

• Sales & Marketing Focus – Support strategies that boost footfall, increase spend per head, and keep customers coming back.
• Team Leadership – Motivate and train staff to deliver energy, entertainment, and outstanding service.
• Operational Excellence – Help oversee day-to-day running of a busy, wet-led venue.
• Business Awareness – Assist in monitoring P&L, KPIs, and cost control.
• Compliance Knowledge – Understanding of licensing, EHO, health & safety, and HR procedures.

What We Expect:

• Previous management or supervisory experience in a high-volume, fast-paced venue.
• A passion for sales, entertainment, and delivering a world-class customer experience.
• Strong communication and leadership skills.
• A hands-on approach – you lead by example.
