Discover the life that awaits you at Accor, visit https://careers.accor.com/ Do what you love, care for the world, dare to challenge the status quo! #BELIMITLESS" Job Description Oversee the strategic direction and operational management of all food and beverage outlets, including restaurants, bars, banqueting facilities, and in-room dining services Develop and implement comprehensive F&B strategies aligned with Fairmont's brand standards and the property's business objectives Manage P&L responsibilities for all F&B departments, ensuring profitability whilst maintaining exceptional service quality and guest satisfaction Lead, mentor, and develop the F&B management team and staff, fostering a culture of excellence, accountability, and continuous improvement Ensure compliance with all health, safety, and hygiene regulations, including food safety standards and local regulatory requirements Collaborate with the Executive Chef to design innovative menus that reflect local culinary traditions whilst meeting international guest expectations Oversee budgeting, forecasting, and cost control measures to optimise operational efficiency and revenue generation Manage vendor relationships and procurement processes to ensure quality products at competitive pricing Conduct regular training programmes for F&B staff on service standards, product knowledge, and guest interaction protocols Monitor guest feedback and implement corrective actions to enhance the overall dining experience and service delivery Coordinate with the Sales and Marketing teams to develop F&B packages and promotional offerings Maintain detailed records of inventory, stock rotation, and wastage management across all outlets Conduct regular audits and inspections of F&B facilities to ensure adherence to Fairmont standards and best practices Qualifications Bachelor's degree in Hotel Management, Hospitality Management, Food & Beverage Management, or a related discipline Minimum 8-10 years of progressive experience in food and beverage operations management within luxury hospitality environments Proven track record of P&L management and financial acumen, with demonstrated ability to drive profitability and cost optimisation Strong knowledge of food safety, health and hygiene regulations, and compliance standards applicable to food service operations Excellent leadership and people management skills with experience in training, mentoring, and developing hospitality teams Proficiency in F&B management systems, point-of-sale (POS) software, and hospitality management software platforms Exceptional communication and interpersonal skills with the ability to liaise effectively with internal departments and external stakeholders Certification in Food Safety Management or Hospitality Management from a recognised professional body Experience working with international luxury hotel brands or Fairmont properties Demonstrated expertise in menu development, culinary trends, and innovative dining concepts Experience in managing multiple F&B outlets simultaneously, including fine dining restaurants, casual dining, and banqueting facilities Strong vendor negotiation skills and experience in procurement and supply chain management Knowledge of revenue management strategies and pricing optimisation techniques within the hospitality sector Additional Information WHAT IS IN IT FOR YOU: Come As You Are Work With Purpose Grow, Learn and Enjoy Explore Limitless Possibilities Job-Category: Food & Beverage Job Type: Permanent Job Schedule: Full-Time
