Description Overnight Baker Sharbert Enterprises is seeking a skilled and dependable Overnight Baker to support commissary production under the direction of our Lead Baker. This is not an entry-level role—it is designed for an experienced baking professional with demonstrated leadership or assistant head baker experience. Working overnight in our BZN Airport commissary kitchen, this role plays a critical part in delivering high-quality baked goods that support multiple airport concepts. The products you create overnight are experienced by thousands of travelers each day and help set the quality standard across our cafés and restaurants. This position also supports leadership execution, reinforcing standards and assisting in guiding production flow overnight. Schedule & Status Hours: 12:00 AM – 8:00 AM (flexible within production needs) Status: Full-Time or Part-Time Availability Required: Must be able to work a flexible schedule, including weekends and some holidays Key Responsibilities Produce consistent, high-quality baked goods, including breads, pastries, muffins, cookies, and specialty items Execute recipes with precision while maintaining excellent flavor, texture, and presentation standards Support and uphold production standards set by the Lead Baker Ensure production timelines are met to support early morning airport operations Leadership Support & Oversight Assist the Lead Baker in maintaining workflow, organization, and production efficiency Help guide and support team members during overnight production when needed Reinforce standards, consistency, and accountability within the commissary environment Presentation & Craftsmanship Maintain strong visual presentation standards appropriate for airport retail environments Apply finishing techniques that reflect pride in craftsmanship and attention to detail Contribute ideas for product improvements and seasonal offerings while maintaining scalability Cost Control & Efficiency Execute production with strong awareness of yield, waste reduction, and ingredient utilization Follow portion control and standardized recipes to support food cost targets Maintain organized storage and product handling practices Food Safety & Professional Standards Adhere to all food safety, sanitation, and HACCP guidelines Maintain a clean, organized, and professional workstation Follow Sharbert Enterprises’ operational standards and safety expectations Qualifications Minimum 2 years of baking experience, preferably in a production or leadership-support role Strong ability to follow established recipes and execute with consistency and quality presentation Comfortable working independently during overnight hours with minimal supervision Reliable, punctual, and able to manage time effectively in a production environment Basic understanding of kitchen organization, cleanliness, and food safety standards Career Interest: Experienced baker or pastry professional seeking an overnight baking position in a high-volume commissary kitchen. Strong interest in baking, pastries, breads, desserts, muffins, cookies, and scratch-made baked goods. Background in bakery production, food service, restaurant kitchens, or coffee shop bakery environments. Skilled in following recipes, consistent product execution, food presentation, and early morning production schedules. Interested in roles such as baker, pastry chef, bakery associate, bakery supervisor, assistant head baker, dessert production, and commercial baking within airport, hospitality, or restaurant settings.
