DESIRABLE QUALIFICATIONS AND SKILLS:

  • Certificate III in Baking or equivalent is a minimum requirement
  • At least three years of relevant experience may substitute for the formal qualifications listed above
  • Minimum of 5 years of experience in the similar capacity.
  • Have an eye for detail and a strong work ethic.
  • Strong skills in the production of pastries, bread and other baked goods.
  • Should be able to multi task and juggle many things.
  • Ability to follow written instructions

Responsibilities

MAJOR DUTIES AND RESPONSIBILITIES OF POSITION:

  • Kneading, maturing, cutting, molding, mixing and shaping dough and preparing pastry fillings.
  • Weighing of ingredients, oven work and baking.
  • Identifying opportunities for improving the product range.
  • Ensuring the product quality and no contamination of foreign objects.
  • Identifying and notifying supervisors / Bakery Production Manager of possible low standard products or work areas.
  • Ensuring all equipment is used correctly, cleaned, stored properly after it been used every day and to make sure correct operating and cleaning procedures are used for all machinery.
  • Learn and be willing to work in all areas of production.
  • A flexible, adaptable and hands-on approach, willing to work as part of a team
  • Ensure all products are made according to Recipes taking into account variables that may affect quality such as temperature, humidity and time.
  • Provide a helping hand to those around you
  • A willingness to coach and support other team members in learning your craft.
  • Sound knowledge of all aspects of food safety and hygiene
  • Work rotating shifts as required by roster. During busy periods overtime may be required.
  • Maintaining the cleanliness and safety of the bakery.
  • Assisting with stock control and production expenses.
  • Need to follow up on daily production schedules and familiarise yourself with upcoming events and promotions.
  • Participate in weekly production meetings.
  • Regularly communicate with Supervisors and Manager regarding progress, learning, skills and training needs.
  • Ensure all chemicals are used following appropriate MSDS and Chemical Safe use sheets.
  • Report any hazards or potential hazards to a Supervisor immediately and complete the appropriate Hazard or Incident Report.
  • Accepting direction from Supervisors, Bakery Manager and Management.

MAJOR DUTIES AND RESPONSIBILITIES OF POSITION:

  • Prepare a wide variety of goods such as cakes, cookies and pies, etc. following traditional and modern recipes.
  • Decorate pastries using different icings, toppings etc. to ensure the presentation will be beautiful and exciting.
  • Create new and exciting desserts to renew our menus and engage the interest of customers.
  • Check quality of material and condition of equipment and devices used for cooking.
  • Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget.
  • Guide and motivate pastry assistants and bakers to work more efficiently.
  • Identify staffing needs and help recruit and train personnel.
  • Maintain a lean and orderly cooking station and adhere to health and safety standards.
  • Ensuring all raw ingredients are to Lawleys standards and fresh.
  • Check all preparation areas are clean to ensure compliance with occupational health and safety regulations.
  • Skilled handwriting on cakes, and able to do finishing of cakes which includes glazing buns and pastries and decorating cakes with cream and icing.
  • Ability to knead, cut, mix, mould and shape dough and pastry goods.
  • Weigh and mix ingredients, knowledge of maturing procedures for mixes.
  • Control mixing times and transfers dough to tempering rooms.
  • Prepare pastry and cake mixes.
  • Mix, mould and shape pastry dough.
  • Loads pastries and cakes into ovens and unload cooked products.
  • Control baking times and monitor the temperature and appearance of products
  • Empty, clean and grease baking trays, tins and other cooking equipment
