Melbourne’s favourite taco truck is opening a new, agave-focussed venue in Chinatown. We are looking for an experienced and enthusiastic Bar Manager to plan and run our beverage program.
The Role - Bar Manager at Dingo Ate My Taco
You’ll be working alongside our dynamic team to take Dingo to the next level. This role requires you to focus on the bar, including potential product development for the agave side of the business, operations, COGs management, and training and upskilling the bar and FOH teams. Great role for a bartender or hospitality professional with a passion for agave.

About Us
Dingo Ate My Taco started as a food truck in July 2020, in the middle of the pandemic. The truck quickly became a Melbourne cult favourite, selling out almost daily for the first few years. Our tacos are completely made from scratch, and we place a high value on doing the best and most interesting food possible, but in casual settings. We’ve run a series of long-term and short-term pop-ups, opened a brick-and-mortar location, and done everything from interstate to international collaborations. We are now in the process of opening our first locations to include a bar, and are looking for the right person to launch our beverage program.

What We Need

  • A passion for tacos and agave spirits - Dingo Mezcal launching end 2025
  • Impressive beverage knowledge. If you have ever put sprite in a Margarita, this job is not for you.
  • A love for providing excellent customer service and
  • Experience working in fast-paced bars or clubs
  • Super organised
  • Strong leadership and communication skills to manage and motivate staff
  • Ability to thrive in a busy, energetic, and informal environment
  • Willingness to work nights and weekends…because it’s a bar and that’s when we’re open
  • Ability to potentially facilitate events and coordinate live music/DJs
