ACCOUNTABILITIES:

O Management & Rostering of all Beverage Department Employees in Library Cocktail Bar, Banqueting Bar and Terrace Bar(during season).
O Beverage menu creation for the hotel bars (including Dungeon) including all costing and pricing liaising with finance. To assist the Food & Beverage Manager with the hotel wine list creation, costing and pricing.
O To take responsibility for the training & development of all employees in the all of the Hotel Bars (including Dungeon), working alongside the Human Resources Manager in developing training plans ensuring that the beverage areas have safe working practices and procedures in operation and that these procedures are adhered to at all times
O To liaise with the Lobby Manager/ Assistant Lobby Manager to ensure smooth operation while both are operational and correct cash handling procedures through these periods
O To liaise with Mapas Manager to ensure drinks service is of a sufficiently high standard and ensure the bar staff in Dungeon are supported sufficiently.
O Always maintaining the correct level of beverage supplies and stock in each bar area, ensuring correct documentation of all stock movement is completed accordingly and that all issues/transfers of stock are recorded, and control weekly stock-take.
O To assist with service of all bars (including Dungeon) in the hotel whilst on duty.
O To participate in the duty roster for management of the hotel and to ensure of the hotels smooth operation whilst on duty.
O Responsible for ensuring that cash procedures are followed in relation to the following:
o Ensure that the bar and till floats are counted and recorded properly at the end of each shift
o Ensure that all movement of monies from floats are counted and recorded correctly
o Reconciliation of all beverage revenue, completion of lodgments, documentation of shortages and discrepancies as well as the investigation and follow up of same
o Ensure that all credit card and cheques are dealt with in accordance with hotel policy
o Ensure that all procedures in relation to all safes are fully adhered to
O To develop good relations with beverage companies and representatives and order stock supplies when necessary
O Creation, costing, pricing & delivery of drinks and cocktail menus in all of the hotels bars (including Dungeon).
O To be responsible for customer care in Library Cocktail Bar and Banqueting Bars, and Terrace Bar (during season) dealing with all customer complaints/comments with appropriate follow up/investigation and passing on relevant information to Food & Beverage Manager
O Ensuring constant communication with the employees under your direct Management and communicating any problems back to the Human Resources Manager and Food & Beverage Manager.
O Being fully aware of hotel policy in relation to Fire, Health & Safety, Hygiene and Customer Care, and ensuring that these procedures are always followed, e.g., ensuring fire check is done, problems dealt with, and fire book is filled in noting any problems that may need to be passed on to Senior Management
O Being fully aware of company policy regarding the reporting and follow-up of accidents occurring in beverage areas and ensuring all relevant information is passed onto the Hotel Manager. Where applicable cause of accidents is investigated and actioned.
O To ensure you have an in-depth knowledge of your department product, in addition to being aware of the total hotel facilities and ensuring your team members are equally informed of all products and services.
O To work as part of the team, being aware of colleagues and their needs, and being flexible at all times
O To promote sales within the department and across the hotel
O To have pride and commitment in your area of work
O To appraise/assess employees as required
O To attend hotel and departmental meetings as required, ensuring effective communication at all levels
O To maintain all company policies and procedures
