Description
Manage all bar and lounge operations to ensure the achievement of established beverage quality, guest service standards, and departmental revenue and profit targets. Ensure full compliance with local health, safety, and regulatory requirements, as well as brand standards and internal policies. SERVICE STANDARDS & OPERATIONS * Deliver Food & Beverage service in accordance with departmental standards and procedures. * Develop and implement departmental standards that enhance salesmanship, beverage creativity, and profitability. * Communicate guest feedback, operational challenges, and relevant information to the Food & Beverage Manager. * Conduct daily briefings and attend scheduled Food & Beverage meetings. * Deliver structured training sessions based on the departmental monthly training calendar. SERVICE PREPARATION Ensure the bar is fully prepared for service by confirming that: * Staff grooming and presentation meet IHG personal appearance standards. * Equipment is clean, organized, and properly stored. * Glassware is polished and ready for use. * Special event requirements are prepared in advance. * Music and lighting are appropriately set. * The outlet environment is comfortable and ready to receive guests. SERVICE DELIVERY Ensure effective service by guiding staff in: * Greeting and seating guests professionally. * Explaining and up-selling daily beverage specials. * Processing food and beverage orders accurately. * Using trays and tray jacks correctly. * Taking orders promptly and efficiently. * Handling payments accurately. * Cleaning and resetting work areas quickly. * Maintaining bar cleanliness and regularly clearing ashtrays. * Engaging guests in conversation about food and beverage offerings. BEVERAGE SERVICE Maintain high beverage service standards by ensuring: * Beverages are up-sold and replenished regularly while complying with responsible alcohol service regulations. * Staff confidently recommend wines, explain styles, take wine orders, and serve wine appropriately. * Cocktails are actively promoted and sold to guests. * Cocktails are prepared and presented according to quality standards. * Coffee and tea are served hot and in line with service standards. GUEST CARE & COMPLIANCE Ensure responsible guest service by: * Advising guests about alcoholic beverages and their strength. * Complying with local liquor licensing laws and regulations. * Monitoring guest intoxication levels and taking appropriate action when necessary. * Informing guests of the hotel’s smoking policy. * Monitoring factors that may affect the overall guest experience. * Handling guest complaints promptly and professionally. CELLAR & INVENTORY MANAGEMENT Oversee cellar and beverage systems, including: * Proper operation of refrigeration systems. * Efficient use of post-mix syrup bulk dispensing systems. * Operation and maintenance of beer reticulation systems. * Strict adherence to stock control procedures. * Accurate requisition of bar items based on stock levels. TEAM DEVELOPMENT * Train bar attendants, wait staff, and bus staff in beverage knowledge and service standards. * Complete spillage reports and submit them to the Food & Beverage Manager at the end of each shift. MARKETING & ENTERTAINMENT * Assist the Food & Beverage Manager in sourcing and evaluating live entertainment such as DJs and musicians. * Support the promotion of entertainment activities in the outlet. * Design promotional materials aimed at increasing bar revenue, guest covers, and profitability, subject to approval from the Food & Beverage Manager. FINANCIAL & RESOURCE MANAGEMENT * Work with the Food & Beverage Manager on manpower planning and staffing requirements. * Assist in preparing and managing the department’s annual budget and financial performance.
