Responsibilities
  • Ensure that all Back of House Standards are met.
  • Ensure that all Back of House staff are trained as required.
  • Ensure that Back of House budgets are controlled.
  • Responsible for the Contracted cleaners, porters and polishers.
  • Responsible for the collection and delivery of all laundry.
  • Receive deliveries correctly by ensuring that they are to the correct spec, weight, quality, quantity and temperature.
  • Input of all daily invoices onto Marketman system and approve for payments as/if required.
  • To file all invoices that require products to be updated on Marketman system, for the F&B cost controller to update.
  • Raise credit requests as required.
  • To understand and comply with food hygiene regulations, Health & Safety regulations and HACCP.
  • To practice and manage FIFO (First-in First-out) principles of food and beverage stock management as applicable.
  • To ensure that all areas such as the goods receiving are, back corridor, dry store/shelves, and fridges are cleaned and kept tidy daily.
  • Check and monitor all fridge & freezer temperatures.
  • To assist and support the BOH team with tasks such as linen deliveries, waste collections, glass crushing and cardboard bailing.
  • To attend all statutory training as required by the company.
  • To carry out any reasonable request made by a member of the management team.
