We are seeking a passionate and experienced Breakfast Chef to join our vibrant team at Mercure Melbourne Doncaster. This role is ideal for someone who is self-motivated, enthusiastic, and has a love for fresh food and professional kitchen standards.

ABOUT THE ROLE:

  • Be part of a passionate team delivering creative and indulgent breakfast experiences using traditional techniques and premium ingredients with a modern twist.
  • Work in a unique hotel breakfast restaurant and support room service operations.
  • Collaborate with an amazing team dedicated to providing exceptional customer service.

KEY RESPONSIBILITIES:

  • Oversee and lead the breakfast shift, including a full buffet breakfast and live omelet station.
  • Prepare and present food according to Brand Standard guidelines.
  • Maintain high standards of food preparation, presentation, and cooking techniques.
  • Interact with guests, ensuring excellent customer service and memorable dining experiences.
  • Support stock control, including daily monitoring and reporting stock needs to the Head Chef.
  • Ensure strict stock rotation and aim for minimal wastage.
  • Maintain cleanliness and hygiene in all kitchen areas in accordance with Health & Safety and HACCP standards.
  • Take responsibility for the smooth operation of an assigned kitchen section.
  • Assist in food preparation for breakfast buffet and function services.
  • Foster a positive work environment focused on continuous learning and quality improvement
