Job Description The Butcher is responsible for the daily production of meats, poultry, fish, patties and sausages in the butcher shop, cutting, curing, slicing, yielding, and weighing of all butcher shop products for the hotel and the proper labeling and storing of products. Job Responsibilities: The Butcher is also responsible for portion and quality control. Conducting product inventories. Guides & trains trainees. Maintains the cleanliness and sanitation of work areas and equipment in accordance with Health Department standards. Qualifications Job Requirements: Candidates must be able to communicate in English fluently. 2nd language a plus. Must be able to read and follow recipes. Requires the ability to complete basic mathmatical calculations. Requires a minimum of 3 years prior Butcher experience, preferably in a high-volume hotel environment. Formal butcher training/apprenticeship preferred but not required. Candidates must exhibit accurate knife skills and extensive butcher knowledge, including seafood. Candidates must be able to work in a refrigerated productions environment. Requires the ability to work within a team environment.
