This role focuses primarily on portioning and preparing premium beef cuts and seafood while maintaining the highest standards of cleanliness, consistency, and communication. The ideal candidate is detail-oriented, efficient, and comfortable working independently while collaborating closely with the Chefs and Sous Chefs. Schedule: 1–2 days per week (flexible, based on production needs) Key Responsibilities -Fabricate and portion premium beef cuts, including: -Beef tenderloin -New York strip -Ribeye -Clean, trim, and portion fresh seafood, primarily -Salmon fillets -Occasional halibut and other seasonal fish -Prepare and execute protein brines, cures, or marinades as directed by the culinary leadership -Maintain accurate portioning to support food cost controls and menu consistency -Follow all sanitation, food safety, and HACCP standards at all times -Keep workspaces, tools, and storage areas clean, organized, and professional -Communicate effectively with the Chef and Sous Chefs regarding yields, quality, and inventory needs -Properly label, store, and rotate all products (FIFO) -Support special events or increased production needs as scheduled Requirements Qualifications & Skills -Previous experience as a butcher, meat cutter, or protein-focused prep cook preferred -Strong knife skills and knowledge of beef and seafood fabrication -Understanding of proper handling, storage, and sanitation practices -Ability to work efficiently and independently with minimal supervision -Professional demeanor and strong communication skills -Reliable, punctual, and detail-oriented Culinary school or formal training a plus, but not required Work Environment -Professional, team-driven kitchen environment -High standards consistent with private club dining -Respectful, organized, and well-managed operation Compensation & Benefits: This is a part-time position offered at $30 per hour.
