REQUIREMENTS:

• A highly skilled butcher with a passion and understanding of sustainable farming
• Knowledge of FSA requirements
• A safety-first approach to working
• Confident working in a team and independently
• Excellent verbal communication skills.
• Maintain a positive and professional working environment
• Full ownership, responsibility and accountability for the role
• Be flexible and prepared to do whatever is required

JOB SKILLS & QUALIFICATIONS:

• Minimum 5 years’ experience as a butcher
• Excellent practical butchery skills
• Knowledge of food safety requirements
• HACCP trained
• Knowledge of FSA requirements
• Knowledge of food planning systems
• Attention to detail, quality and pace at all times

• A skilled member of the Butchery team
• All aspects of butchery for carcass and primal breakdown work with Beef, Lamb, Mutton, Pork, Venison and Poultry.
• Assisting Small Goods production of sausages, burgers, mince and stuffings when required
• Intake process controls, quality checks and grading of carcass deliveries
• Hanging fridges organisation and carcass transfers
• Issuing, weighing and labelling of all produce in line with works orders
