Key Responsibilities Sales & Business Growth Analyze weekly and monthly sales data to identify trends, top-performing products, and untapped opportunities for revenue growth. Develop and present data-driven recommendations to ownership on product mix, pricing, seasonal offerings, and production volume adjustments. Proactively track sales performance against prior periods and set stretch goals — actively working to grow, not maintain, the business. Partner with ownership to develop and launch new products or limited-edition items that capitalize on seasonal demand and customer preferences. Monitor wholesale client order patterns and identify opportunities to expand accounts or introduce new SKUs. Team Leadership & Management Lead, coach, and inspire the cake production team to consistently meet quality standards, production targets, and growth goals. Build a positive, accountable team culture where high performance is celebrated and underperformance is addressed constructively. Create and manage daily and weekly production schedules that align with sales volume, special orders, and growth targets. Train new and existing team members in decorating techniques, food safety, and Too Sweet Cakes' standards. Conduct regular team check-ins to communicate performance data, share goals, and maintain team alignment. Cake Production & Quality Oversee and participate in hands-on production of cakes, cupcakes, French macarons, and other baked goods at high volume (hundreds of cakes weekly). Maintain Too Sweet Cakes' strict quality standards — meticulous attention to detail is non-negotiable. Pipe cupcakes, fill and torte cakes, and prepare batters, buttercream, and fillings to exacting specifications. Monitor all baking processes and make real-time adjustments to protect quality and output. Oversee proper storage, labeling, and shelf-life management of all products. Operations & Compliance Maintain a clean, organized, and fully compliant kitchen environment at all times. Ensure all team members adhere to OHA food safety, sanitation, and health regulations. Operate and oversee the safe use of kitchen equipment including mixers, ovens, and dough sheeters. Manage ingredient inventory and communicate proactively with ownership on ordering needs and cost considerations. Complete additional duties as directed by ownership to ensure business needs are met. Experience: 4–6 years of professional cake decorating experience; 2–3 years in a management or team leadership role. Data Mindset: Comfort working with sales reports, spreadsheets, or POS data to draw actionable insights and drive growth decisions. Growth Orientation: A demonstrated track record of not just maintaining but actively growing a business, department, or team. Pastry Expertise: Deep knowledge of pastry methods, techniques, and production at scale. Leadership: Strong communication skills and a proven ability to lead, motivate, and hold a team accountable. Certification: OHA Food Handler's Certificate required (or ability to obtain prior to first day). Physical Requirements: Ability to lift up to 25 lbs. frequently and up to 50–75 lbs. occasionally; ability to stand for extended periods. Organization: Exceptional time management and prioritization skills in a high-volume, fast-paced environment. Flexibility: Open availability including weekends — this role requires consistent weekend presence.
