Responsibilities
  • Plan NVQ training and induct new candidates onto the NVQ programme.
  • Complete practical demonstrations for NVQ candidates and coach and mentor them through theory questions for NVQ.
  • Interview new kitchen workers (prisoners) as required.
  • Train prisoners and staff in the use of all kitchen equipment and Health and Hygiene practices, keeping up to date training records for prisoners and staff.
  • Assist where necessary in food preparation.
  • Ensure all food storage areas, utensils and equipment are regularly cleaned in accordance with the cleaning schedule.
  • Identify any further training needs for all staff and action as appropriate.
  • Maintain component hygiene standards, within the main catering areas and monitor client’s servery areas by completing servery check lists.
