Responsibilities Business Unit / Department Mission: Inspects, wraps, rotates, cuts, tests, and orders meat for new and existing retail customers by performing the following duties.ESSENTIAL FUNCTIONS AND PROCESS RESPONSIBILITIES(Other duties may be assigned as necessary)- Must be familiar with over 100 cuts of meat. Responsible for Market operation in Manager's absence.- Assists Manager with organization and delegation of duties, including scheduling.- Cuts meat for full and self-service cases.- Organizes and delegates the day-to-day operation of the meat market.- Places and receives meat orders, includes inventory control.- Monitors work conditions for safety and sanitation.- Cleans, sanitizes, and organizes the meat cooler, the cutting room, and the wrap station.- Performs cutting tests on the profitability of retail meat cuts.- Provides internal customer service. Assists in supervising up to 10 employees in the Market Department.EXPERIENCE AND EDUCATION PREFERRED- Typically requires 5-8 years of related experience.- Knowledge of department product, food preparation, and equipment required.- Supervisory experience preferred.- 2-3 years exp. in meat cutting, food preparation, and equipment required.- Food Safety and Sanitation Certification preferred.PHYSICAL AND OTHER REQUIREMENTS- Function in a fast-paced, retail environment- Lift 20 lbs or more on an occasional basis09-2011
