JOB SUMMARY

Under the general supervision of the Senior Director of Dining Services, the Certified Dietary Manager is Certified Food Protection Professional (CDM®, CFPP®) holds the education and experience to competently perform the responsibilities of a dietary manager and has proven this by passing the nationally recognized CDM Credentialing Exam and fulfilling the requirements needed to maintain certified status. CDM, CFPPs work together with Registered Dietitian Nutritionists (RDNs) to provide quality nutritional care for clients in a variety of non-commercial settings and perform a myriad of specialized tasks. The CDM is responsible for the planning, organizing and direction of the dining department, while ensuring the highest standards of quality, service and cleanliness to Glencroft residents, guests and staff member in accordance with the mission and values of Glencroft Center for Modern Aging. This position is responsible for maintaining high standards in service, food preparation, resident relations, costs, personnel, and safety, sanitation, training and special functions. This position assists in the maintenance of sound inter-departmental relations and the integration of the dining services department with Glencroft’s plan of operations. The Certified Dietary Manager manages employees within the framework of teamwork and empowerment. The Certified Dietary Manager will possess a genuine interest in and concern for geriatric, chronically ill and/or disabled persons. Must be able to fluently communicate in or to take or give direction or guidance in the English language.

Responsibilities
  • Regular attendance is considered an essential function of this position and is necessary for the efficient operation of the business.
  • Oversees the process with Human Resources of interviewing, hiring, onboarding and training all dining staff members in accordance with the direction received from the Senior Director of Dining Services.
  • Produces the work schedule for the dining services department and ensures that there is less than 2% overtime every pay period.
  • Directly supervises all dining staff members and performs performance evaluations throughout the year for staff members on a timely basis.
  • Gives timely coaching, counseling and discipline to staff members, when necessary, in accordance with Glencroft’s policies and procedures utilizing proper tools and forms.
  • Responsible for overseeing special events set-up, execution, and break down. Responsible for handling resident, guest and employee complaints, if any, and rectifying problem situations.
  • Develops and maintains a high level of staff morale, a low turnover rate, and employee motivation through daily meetings and a consistently firm but fair system of discipline.
  • Responsible for working closely with the Administrator and Senior Director of Dining Services to ensure that the dining services department is running at or under budget and takes the necessary steps to maintain this standard. Incumbent is to monitor budget weekly and report monthly.
  • Develops and maintains controls to ensure the production of food is meeting Glencroft’s quality standards. Enforces control and quality assurance on a continual basis. Maintains continual state of cleanliness and sanitation.
  • May assist the Administrator and Senior Director of Dining Services in the predicting, planning, monitoring and evaluation of cost programs used by the dining services department.
  • Assist with menu planning and writing and maintaining recipes and menus on a weekly basis.
  • Conducts a “Show Time” meeting before every meal so staff members can best describe the menu choices and are aware of ingredients in the dishes to be served.
  • Circulates in dining areas during meal periods to field resident/guest comments pertaining to service and food quality.
  • Responsible for the daily and weekly ordering of department food.
  • Actively participates in committee meetings, as appropriate and volunteers valuable feedback in these meetings.
  • Maintains good working relationships with all residents, dining services staff, and the management team at Glencroft.
  • Conduct routine client nutritional screening which includes food/fluid intake information, calculate nutrient intake, and identify nutrition problems using established guidelines to distinguish between routine and at-risk individuals.
  • Identify food customs and nutrition preferences based on race, culture, religion, and food intolerances.
  • Implement diet plans and diet orders using appropriate modifications.
  • Utilize standard nutrition care procedures following ethical and confidentiality principles and practices, document nutritional screening data in the medical record and complete forms (i.e. care plans, MDS, etc.).
  • Review intake records, conduct visual meal rounds, and document food intake.
  • Continuously improve care and service using quality management techniques including quality control standards and food waste policies.
  • Supervise preparation and serving of therapeutic diets and nutritional supplements.
  • Manage a sanitary foodservice environment.
  • Protect food in all phases of preparation, holding, service, cooling, and transportation.
  • Purchase, store, and ensure safe use of chemicals and cleaning agents.
  • Manage equipment use and maintenance.
  • Supervise business operations of foodservice department, implementing cost effective procedures and managing revenue-generating services.
  • Comply with federal and state regulations related to effective food and nutrition services.
  • Performs other duties as assigned.
