JOB DESCRIPTION   POSITION SUMMARY: Produce with consistency high-quality products and operate the production room in a safe, efficient manner for both personnel and products.   PRIMARY RESPONSIBILITIES: * Make sure milk is at the correct temperature. * Maintain settings on pasteurizer and separator and maintain charts. * Add ingredients to the vats. * Maintain efficiency and meet production schedules by effective supervision and utilization of resources. * Monitor policies, procedures, protocols, good manufacturing practices, and safety rules and regulations are followed by all employees.   KEY ACTIVITIES: * Know when to cut the vat. * Heel time. * Cook proper temperature. * Stir out time. * Pre down. * Pump-over * Keep proper eye on body cheese. * Oversees all shifts, until vats are empty. * Identify and implement measures to improve production methods, equipment performance and quality of product. * Observes and evaluates performance of workers to ensure conformance to manufacturing requirements. * Other duties as assigned by the Production Supervisor and/or Operations Manager. PERFORMANCE METRICS: * Quality finished products and no customer complaints. * The successful manufacture and consistency of a quality product. * Dependability and punctuality. * Knowledge of equipment. * Knowledge of chemicals and charts. * Interprets manufacturing requirements and deadlines. * Safe work habits.   NECESSARY EXPERIENCE: * High School or equivalent. * Active & valid WI cheesemaker license or willingness to obtain upon hire. * Operational knowledge of cheesemaking. * Cheese Manufacturing Experience. SKILLS REQUIRED: * Good written and verbal communication skills to lead a team. * Ability to multi-task and prioritize. * Ability to follow cheese recipes. * Ability to read charts, settings, gauges, and thermometers. * Problem solving and decision-making skills. * CIP and cleaning methods for facility. Employees may work in areas with variable temperatures, machinery noise, and exposure to food ingredients and sanitation chemicals. The role requires standing or walking for extended periods, performing repetitive tasks, and regularly lifting up to 25–35 pounds (occasionally up to 50 pounds with assistance).
