Major’s Grill blends timeless elegance with dramatic flair. The menu will be a love letter to classic cuisine, showcasing the finest cuts of meat, seafood and local produce. An original concept, Major’s Grill is set to redefine London dining. As Chef de Cuisine, you will play a central role in shaping not just our menu, but our culture. Working closely with the Executive Chef, you will define the restaurant’s culinary direction, develop exceptional menus, and establish standards that ensure consistency, creativity and quality. Your leadership will strengthen the connection between kitchen and service, support the growth of team members, and help position Major’s Grill as a standout Mayfair destination known for remarkable food, refined standards and genuine hospitality. At Cambridge House, our kitchen team is at the heart of this vision, shaped by respect, integrity, collaboration and true craft. Key Responsibilities: Lead the day-to-day running of the kitchen, ensuring every dish reflects our commitment to refined quality, consistency, and presentation. Design, develop, and refine menus (including à la carte, seasonal specials, tasting menus, private dining, and events) that embody the personality of Cambridge House, blending culinary creativity with timeless standards. Oversee procurement and sourcing of fresh ingredients, working closely with the Executive Chef and suppliers to secure the finest produce while ensuring cost-effective and sustainable food operations. Manage kitchen operations, including food preparation, cooking, plating, timing, and service flow, ensuring smooth, high-volume service without compromising quality. Guide, mentor, and support your kitchen team members, promoting skill development, collaboration, and a positive, respectful working environment. Lead recruitment, onboarding, and development of kitchen team members to build a cohesive, talented, and motivated team aligned with the culture of Cambridge House. Maintain and uphold the highest standards of hygiene, food safety, and kitchen compliance at all times. Work closely with senior hotel management and restaurant leadership to align culinary offerings with the hotel’s vision, guest expectations, and brand identity. Play an active role in planning for Major’s Grill’s grand opening, including team member training, service rehearsals, and refining kitchen logistics ahead of launch. Qualifications Proven track record of at least 5-10 years in a senior culinary role in a luxury hotel or high standards restaurant. Deep understanding of modern and classic culinary techniques, with a flair for creativity and presentation, and a refined palate. Demonstrable experience in menu development, cost control, ingredient sourcing, and kitchen management. Strong leadership skills: you must be adept at guiding, motivating and developing kitchen team members, promoting a culture of respect, teamwork, and shared pride in delivering excellence. Excellent organisational and time-management skills; ability to manage a fast-paced kitchen, multi-service demands and events without compromising standards.
