Job Description Job Description Mercure Perth is seeking a skilled Casual Chef de Partie to support the Head Chef in daily kitchen operations. You will assist in menu preparation, ensure high standards of food quality and presentation, and supervise kitchen staff in the absence of senior chefs. Key responsibilities include: Assist in managing kitchen operations, delegating duties, and ensuring service demands are met. Support menu preparation, stock management, and cost control. Ensure food preparation, cooking, and presentation adhere to established recipes and brand standards. Supervise and mentor apprentices and junior kitchen staff. Maintain hygiene, food safety, and workplace health and safety standards. Assist with rostering, training, and team development. Collaborate with internal departments and liaise with suppliers. Act as an ambassador for Accor, supporting the Heartist culture and delivering exceptional guest experiences. Participate in Accor’s ESG initiatives and sustainability programs. Workplace Health & Safety: Follow safe work practices and participate in risk assessments. Maintain kitchen hygiene and safety standards. Contribute to a proactive WHS culture and report hazards promptly. Qualifications Relevant culinary trade qualifications. Previous experience in a hotel or hospitality kitchen environment. Strong knowledge of food safety requirements, HACCP, and kitchen hygiene standards. Ability to work independently, with initiative and energy in a dynamic environment. Strong interpersonal, communication, and team leadership skills. Passion for delivering high-quality cuisine and exceptional guest experiences.
