CHEF DE PARTIE con esperienza pregressa, almeno 3-5 anni, maturata in contesti di alto livello/stellati dotati di forte passione per il ruolo. Ottima padronanza di tutte le partite. Ottima padronanza di tutte le principali tecniche di cottura (arrostitura, bollitura, brasatura ,frittura, stufatura, cottura a vapore ed a bassa temperatura). Ottima conoscenza di tutti gli utensili di cucina e strumenti di cottura con uso delle piastre ad induzione E’ inoltre fondamentale possedere ottime doti di lavoro in brigata e di relazione, precisione e rispetto dei tempi impartiti dallo chef. Lo Chef de Partie si occuperà di: Preparazione della giornata di servizio, definizione ordini, controllo stoccaggio e conformità materie fresche, pianificazione del servizio giornaliero in collaborazione con l’ Executive chef. Preparazione e porzionamento materie nobili, preparazione salse, basi, fondi e decorazioni su base ricetta cook book e in base alla partita di competenza. In servizio: responsabilità diretta su cotture, consistenze e bilanciamento dei piatti come previsto da executive chef, seguirà inoltre le regole di impiattamento come da indicazioni dello chef. Coordinamento chiusura della partita e con il supporto di un commis si occuperà della definizione del recupero materie di scarto, effettuerà il controllo di tutti gli ambienti di pertinenza a garanzia del piano HACCP sottoscritto Definire con l’ Executive chef nuove proposte stagionali da inserire nel menù.. REQUISITI: Diploma Alberghiero L’esperienza in contesti strutturati di alto livello. Passione per il ruolo e per il settore in generale Apertura, flessibilità, dinamismo e precisione. Responsibilities

The Chef de Partie is responsible for daily service preparation, managing orders, and ensuring the quality and consistency of dishes according to the Executive Chef's standards. They also coordinate the closing of their station, manage waste recovery, and contribute to the development of seasonal menu proposals.
