Black Swan Winery and Restaurant is one of Swan Valley’s iconic and premier dining venue.
The restaurant is a fully licensed venue offering a la carte dining for lunch and dinner and catering for many functions ranging from special occasions, birthday celebrations, corporate events, hen’s parties and wedding receptions.
The venue’s restaurant is open 7 days for lunch and Friday and Saturday evenings for dinner and open most public holidays.
The kitchen is headed by UK trained chef, Mick Kinnane, who, with his team produce Modern Australian, European and Mediterranean style cuisine. The quality and style of food has awarded the venue with numerous accolades and offers a dining experience with a point of difference to locals and tourists visiting the region.
Black Swan Wines Pty Ltd is seeking a well-qualified and experienced Chef de Partie for larder and grill section. Due to emphasis placed on the venue food offerings of home style Mediterranean cooking, the chef he is seeking a chef with skills in the following attributes
The applicant must be qualified, have qualification documents and at least 2 years’ experience as a Commi or Chef de Partie.
Be proficient and have flare in making and preparing a range of entree meals, salads, and desserts. Knowledge of International cooking skills would be beneficial.
The applicant is to have knowledge and cooking’s skills related to seafood, red and white meat, and also with pizza’s, fresh pasta, tapas, desserts.
The applicants culinary arts experience is mainly for hot and cold larder but must have some skills in grill and pan work.
As a Chef de Partie, you would be required to manage their own prep work, cooking and plating relevant to the section.
The kitchen is large and well equipped including a combi oven and sous vide machine.
The venue is very busy and fast paced particularly on weekends and we are looking for a person who can work under pressure, proficient in their section and can work with a team.
Own reliable motor vehicle is essential due to minimal Swan Valley public transport.
The position is available for start on or before the 1st 0ctober 2024.
