Key Responsibilities – Chef de Partie Cruise Ship Role & Culinary Operations Manage a specific kitchen section (such as hot, cold, grill, or sauce) and supervise junior team members during daily food preparation, cooking, and plating for various dining venues onboard. Ensure consistent execution of recipes, portioning, and presentation standards across all finished dishes, supporting culinary excellence and guest satisfaction. Maintain a clean, orderly, and hygienic environment in assigned galley workspaces, upholding USPH, HACCP, and cruise line food safety and sanitation requirements at all times. Monitor ingredient inventory, assist with ordering, stock rotation, and correct storage to optimize freshness and control food costs. Lead, mentor, and train junior chefs, fostering a collaborative, inclusive, and respectful kitchen culture that values all backgrounds and experiences. Adapt to evolving menus, guest dietary requirements, large-scale banquet production, and themed events as directed by the Sous Chef and Executive Chef. Requirements – Cruise Ship Chef de Partie: Culinary Skills & Experience At least 2 years of professional experience as a Chef de Partie, Line Cook, or similar role in a high-volume, quality-focused culinary environment. Previous cruise ship, hotel, or luxury restaurant experience is strongly preferred. Comprehensive knowledge of classic and contemporary cooking techniques within your specialty section, as well as safe equipment operation, plating, and finishing skills. Solid understanding of global cuisine, food safety, and kitchen hygiene protocols. Ready to follow detailed procedures and maritime standards for safe food preparation at sea. Excellent team leadership, problem-solving, and communication abilities, enabling you to support and motivate an international kitchen staff. Adaptable, reliable, and attentive to detail, thriving under multi-tasking conditions and rapidly changing service demands. Proficiency in English for clear communication with colleagues and guests; additional languages are a plus but not required. Daily Tasks – Onboard Chef de Partie: Section Management & Food Preparation Set up and organize assigned kitchen section with all needed tools, ingredients, and mise en place for efficient meal service. Execute high-quality preparation and cooking of appetizers, entrees, sides, and specialty dishes, meeting brand standards and guest expectations. Guide and instruct Commis and Demi Chef de Partie team members, ensuring smooth workflow, proper technique, and timely service. Perform regular cleaning and maintenance of workstation equipment, storage units, and prep areas according to strict hygiene protocols. Coordinate with other kitchen sections and restaurant service teams to ensure seamless, guest-focused dining experiences. Qualifications & Additional Details – Chef de Partie Cruise Ship Opportunities Prepared to live and work at sea for 6–8 month contracts, adapting to fast-paced schedules, rotating shifts, and life in an international community. Must hold a valid passport and all necessary visas for worldwide cruise assignments (such as a US C1/D visa, where applicable). Successful completion of an English language and culinary assessment, as well as a pre-employment medical examination, per maritime requirements.
