Description
We are seeking an experienced and dependable Chef de Partie (Hot Kitchen) to join our kitchen brigade. The role is suited to individuals who are passionate about delivering high-quality hot-food production, thrive in a fast-paced environment and take pride in consistency, presentation and food safety. This position is open to applicants from all backgrounds and is gender neutral. Key responsibilities for Chef de Partie (Hot Kitchen) Prepare and cook hot dishes to menu specifications, ensuring consistency of portioning, taste and presentation during service periods. Operate one or more sections of the hot kitchen (for example grill, sauce, sauté or rostisserie) to a high standard under direction from the Sous Chef and Head Chef. Maintain mise en place, manage stock on the section and ensure timely delivery of dishes to pass for service. Monitor and control food quality and waste, reporting any issues to senior kitchen staff and contributing to cost control initiatives. Follow recipes, portion control, plating and garnishing standards to meet brand and menu requirements. Support training and development of commis chefs and apprentices on the section, supervising practical work and offering constructive feedback. Ensure all dishes leaving the kitchen meet food safety, allergen and dietary requirements, checking allergen labels and following ordering procedures. Clean and maintain workstations, equipment and utensils to required hygiene standards, participating in kitchen deep-clean schedules. Work collaboratively with front-of-house teams to manage service flow and accommodate special requests or dietary needs. Adhere to health and safety, COSHH and HACCP procedures at all times and participate in regular training and audits. Required skills and experience for Chef de Partie (Hot Kitchen) Proven experience working in a similar hot-kitchen role within a busy commercial, contract or hospitality environment. Good classical cookery skills with knowledge of hot-cook techniques, timing and temperature control. Ability to work accurately and quickly under pressure while maintaining standards of quality and presentation. Awareness of food safety, hygiene and allergen management with practical experience of HACCP systems. Strong teamworking skills, good verbal communication and willingness to take direction and support colleagues. Physically able to work long periods on your feet, perform manual handling tasks and work in hot environments. Basic numeracy and stock control experience for portioning and inventory tasks. Willingness to work flexible hours including early mornings, evenings, weekends and occasional bank holidays. Qualifications and certifications preferred Culinary qualification (NVQ, City & Guilds, diploma or equivalent) or equivalent practical experience. Food hygiene certificate (Level 2 or above) and up-to-date allergen awareness training. Further qualifications in catering management or specialised cookery courses desirable. Working hours, salary and benefits Full-time hours; shift patterns include early starts, evenings, weekends and bank holidays in line with operational needs.
