Longueville Manor is the 1st and only 5 red AA star Hotel, with one Michelin key in the Channel Islands. It is situated a mile to the east of St. Helier, the capital of the Island of Jersey. The island is fringed with miles of sandy beaches and is frequently blessed with the longest hours of sunshine in the UK. Set in 17 acres of parkland, this 13th century Norman manor house has been lovingly restored and run as a hotel by the Lewis family for over 75 years.
Today, the hotel has 22 double rooms, 6 suites and a 2 bedroom cottage, with a 3AA rosette restaurant, which enjoys a strong local following as well as an international reputation and is the only Relais & Châteaux member in the Channel Islands.
Job Description

As CDP – Pastry, you’ll take ownership of your section, supporting the Head Pastry Chef and leading by example. Your focus will be on delivering outstanding pastry products while maintaining high standards in food quality, hygiene, and kitchen safety.

  • Oversee and maintain stock control, fridge/freezer temperatures, and incoming goods
  • Prepare, produce, and present high-quality pastries, breads, desserts, and vegan/gluten-free items
  • Maintain impeccable cleanliness and hygiene in line with food safety standards
  • Support the Head Pastry Chef in organising the pastry section and managing junior team members
  • Ensure consistency in taste, texture, presentation, and portion size
  • Follow recipes precisely and adapt dishes for dietary needs
  • Assist in service, coordinating timing and quality control of all pastry dishes
  • Contribute to menu development and be open to changes in line with customer and business needs
  • Supervise and mentor junior staff, supporting their training and development
  • Take responsibility in the absence of the Head Pastry Chef
  • Ensure all kitchen equipment is in safe working order and report any issues
  • Uphold all Health & Safety and Fire Safety protocols
  • Assist in allergen management and food safety compliance
  • Attend relevant training and stay up to date with food hygiene practices

Qualifications
-

Experience in a professional pastry kitchen at a CDP level (fine dining experience desirable)

  • Culinary and pastry qualifications
  • Level 2 Food Hygiene Certificate (willing to work towards Level 3)
  • Strong understanding of allergens, dietary requirements, and food safety standards
  • Ability to lead, motivate, and support a small team
  • Passion for learning, development, and kitchen operations
  • A creative mindset with solid technical ability
  • Excellent organisational and time management skills
  • Reliability, punctuality, and a clean, professional approach to work
