Looking for Chef De Partie with experience in Italian Cuisine.
Job Description:
To assist the Executive/Head Chef in the supervision of kitchen production, and to participate in the food production. Ensure that the function provides the highest food quality consistent with cost control and profitability margins; hence maximize guest satisfaction and food profitability.

Responsibilities
  • Ensure required mis en place is complete prior to outlet opening hours.
  • Ensure all stocks are adequate for the needs of the business at all times.
  • Ensure all orders are placed at the required time.
  • Maintain a financial awareness of changing food costs
  • Check the physical condition of food, ensuring adequate operating stock levels are maintained.
  • Independent management of the assigned posts in the kitchen area.
  • Carry out inventories.
  • Give instructions to and manage the kitchen commis and junior staff.
  • Communication with all employees in the service area
  • Documentation of the HACCP lists for all storerooms and observing the HACCP bases for all the relevant areas
  • Monitoring goods in co-operation with the Purchasing Manager.
  • Knowledge of operating all kitchen equipment.
  • Ability to stand and to work continuously in confined spaces.
  • Ability to perform duties within extreme temperature ranges.
  • Ensure the highest food quality appropriate to the market by assisting the Executive Chef in all areas of kitchen operations
  • Adhere to Restaurant standards of food quality, preparation, recipes, and presentation.
  • Ensure proper staffing and adequate supplies for all stations
  • Must be able to run all sections of the kitchen in absence of Sous Chef/Junior Sous Chef.
  • Supervise the proper set-up of each item on menus and ensure their readiness.
  • Oversee the seasonings, portions, and appearance of food service in the operation.
  • Store unused food properly to minimize waste and maximize quality.
  • Work closely with chefs to ensure correct preparation and delivery times are kept and food quality is maintained.
  • Assure proper safety, hygiene, and sanitation practices are followed.
  • Assist Executive Head Chef in checking and ordering fresh products and dry storage items required by the kitchen.
