Job Overview:
We are seeking a skilled Chef de Partie/Sous chef to join our small brigade. We are looking for someone able to lead a team in a fast paced service, with the ability to pass knowledge onto junior chefs and contribute innovative, seasonal dishes to an ever changing menu. A strong foundation of good cookery is essential.
Duties:
- Coordinate and execute preparations for large functions and a fine dining seasonal menu
- Ensure compliance with food safety standards and regulations
- Supervise kitchen staff in the absence of the head chef and provide relevant training when needed
- Manage inventory, including ordering and control of food costs
- Collaborate with management to develop high quality seasonal offerings for our guests
Experience:
- Proven experience as a Chef de Partie or Sous in 2 Rosette setting or similar. Less senior roles will be considered for the right candidate
- Strong knowledge of the fundamentals of cooking. With a grasp of new and traditional techniques
- Experience of leadership roles is desirable but not essential
Skills:
- Strong communication skills
- Ability to work well under pressure as part of a team and as an individual
- Multitasking without compromising on quality
- Confidence in all areas of kitchen jobs; Butchery, Fishmongery, Baking, Pastry etc
