THE CHAMBERS

It’s your chance to become a part of The Chambers Cafe kitchen brigade, bringing your skills and expertise to create and maintain an exceptional culinary offering for all patrons.
We’re looking for an experienced Chef de Partie with great work ethic, passion and strong knowledge in a variety of cuisines! Your hands on approach will see you be a successful team player. Working closely with both back and front of house your communication skills will be exceptional.
This full-time role is an equally rewarding and challenging position and would suit an experienced chef who enjoys a fast paced breakfast and lunch service, with early starts 6am and their afternoons free after 3:00pm (on average.) Working a 40 hour work week with paid overtime on a weekly basis.

The Chambers is an establish café/restaurant in Cairns City with a focus on tasty brunch, delicious flavours and beautiful presentation of the food and drinks! The focus is on local ingredients utilising the very best available.
The Chambers offers both indoor and outdoor seating in a historic building situated in the centre of Cairns City. The team is passionate, friendly & hard working.

REQUIRED SKILLS

  • Preparing, seasoning, cooking and plating dishes as per the recipes in a timely manner
  • Prepping ingredients across all areas in the kitchen
  • Ensuring menu comprehension across the restaurant and cafe
  • Plating all dishes in appropriate portions as per menu card photos as well as including any sides, gravies, sauces and garnishes as per the kitchen docket.
  • Planning menus in consultation with the team
  • Arranging the purchasing and pricing of food
  • Assist with estimating food and labour costs
  • Consistent monitoring quality of dishes at all stages of preparation and presentation
  • Discussing and assisting with the correction of food preparation issues with Managers, Dietitians and kitchen and waiting staff
  • Demonstrating techniques and advising on cooking procedures
  • Explaining and enforcing hygiene regulations
  • Assisting with the selection and training of staff
  • Maintaining records of stock levels and insuring food wastage is at a minimum
  • Ensuring kitchen area and equipment complies with health regulations and are clean, functional and of suitable appearance
  • Experience regulating temperatures of ovens, grills and other cooking equipment
  • Systematically logging fridge and freezer temperatures as well as ensuring food is stored appropriately to exceed food safety guidelines
  • Ability to train and supervise kitchen staff of a lower skill level

EXPERIENCE/AVAILABILITY

  • 3+ years’ Chef de Partie experience alongside relevant Diploma/Certificate qualification
  • Experience in a 7 day a la carte operation offering breakfast, lunch and private functions dinner
  • Team focused and passionate about the industry, Solutions driven and flexible
  • Available to work full-time for a long time (ideally 12 months or more)
