Recently awarded an AA Five Star Gold Awardand an AA Breakfast Award, we are looking for a Chef de Partie to join our team.
Fitting of a 14 Century pub, the style food and beverage is rustic and proudly classically minded with Michelin winning pedigree ranging from Bib Gourmands and stars at the helm.
The menu is to be simple and concise. The menu will be proudly classic dishes made from carefully sourced ingredients (including some direct from the farm), with a pinch of continental know how - no micro herbs, no swipes, no foams, no frilly fussy plating.
Newly refurbished staff accommodation is available.
This is a unique chance for a positive and open-minded person to learn and build a reputation with a bountiful larder at their deposal and an unsurpassable attention to getting the small things right. Set in the South Downs National Park and only a direct train 80-minute train from London the The Swan Inn is conveniently located for actively encouraged dining on days off in London and further afield.

The ideal candidate will:

  • Be able to plan and organise the daily running of a kitchen section
  • Enjoy the charms of simple, rustic cooking drawing on influences from France, Italy and Spain
  • Use the best suppliers in the country – including whole carcass butchery
  • Have a strong attention of detail enjoy food served in a prompt unfussy way
  • Have the flexibility to adjust menus on a daily basis
  • Enjoy and enhance a positive working environment
  • Be involved in the creative menu writing/testing process
  • Learn to minimise food waste
