Responsibilities
  • Demonstrate mastery of all cooking techniques
  • Overall responsibility for the Kitchen (including managing staff, HR concerns, scheduling, food ordering, maintaining equipment, and par food levels)
  • Direct staff in dealing with various diets including vegetarian, vegan, cultural, and food allergies
  • Plan and allocate staff duties appropriate to the required positions
  • Adhere to the Menu supplied
  • Ensure you work within budget and control expenditure
  • Submit orders in a timely manner (only using the template given)
  • Ensure all staff comply with the Food Safety Program (FSP) including completing the correct documentation and spot check certification on regular basis
  • Conduct a monthly FSP audit with the Camp Manager and Client to ensure compliance
  • Supervise, manage, mentor, train (i.e., safe operation of kitchen tools), evaluate, and direct kitchen staff
  • Ensure all daily, weekly and monthly cleaning tasks are completed
  • Adhere and enforce all Health & Safety policies and procedures
  • Ensure staff wear appropriate Personal Protective Equipment as required
  • Conduct Toolbox/Tailgate meetings in accordance with Redrock policy
  • Ensure that Field Level Hazard Assessment and Hazard Identifications are completed by all staff on shift
  • Responsible for ensuring food quality, food safety and food standards are met
  • Ensure deliveries of produce are stored correctly using the FIFO method
  • Complete OH&S documents as required
  • Deal with customer complaints and inquiries in a professional manner
  • Assist in unloading the grocery truck
  • Other duties as assigned Required Skills:
  • Proven ability to lead and manage a team, including strong organizational expertise and time management skills
  • Exceptional interpersonal and communication skills (including reading, writing and speaking English)
  • Proven Experience with grocery ordering and inventory management Proven culinary expertise, with a sound understanding of cyclic menus and menu development
  • Must be able to lift, move, push, pull and carry up to 25lbs
  • Ability to work a 20/10 rotation Required Experience:
  • 5-7 Years of Chef Management experience, working within a high-volume facility and managing a 24-hour production kitchen
  • Red Seal Certification or Equivalent Education and Experience will be considered
  • Must have valid Standard First Aid, Alberta Food Safe Certificates and Common Safety Orientation (CSO)
  • Previous Remote Camp experience would be considered an asset
