POSITION: CHEF

Job Type: Full-time
Okko is a chilled neighborhood sushi bar and izakaya, reminiscent of the vibrant establishments in Tokyo’s Shimbashi district. Our menu combines sushi, sashimi, and Japanese comfort dishes with a creative twist, including customer favourites such as bold, flavour-packed ramen, signature rolls, and tacos. We have been open for 10 years, and currently run 2 locations in East London. We are looking for a passionate and experienced Chef to join our kitchen team at our busy Broadway Market site. This role is ideal for someone who thrives in a high-pressure service environment and has a strong grasp of Japanese cuisine.

REQUIREMENTS:

  • In depth knowledge of Japanese cuisine with previous experience working in a fast-paced, high-level Japanese restaurant.
  • Excellent knife skills and knowledge of sushi preparation techniques.
  • Strong attention to detail and ability to stay calm and focused under pressure.
  • A positive, proactive attitude with a team-first approach.
  • Food Safety Level 2 certificate (or willingness to complete).
  • Availability to work flexible hours including evenings and weekends.
Responsibilities
  • Prep, cook and present all dishes at their best, ensuring consistency, speed and quality.
  • Ensure the freshness and quality of ingredients, maintaining the highest food safety standards.
  • Manage inventory, including ordering and restocking supplies as needed.
  • Collaborate with the kitchen and floor teams to deliver a smooth and memorable dining experience.
  • Maintain cleanliness and organisation of prep and service areas at all times.
  • Take direction from senior chefs and contribute to a positive kitchen culture.
  • Adapt and respond to a fast-paced, high-pressure service with a positive and solutions-oriented mindset.
