QUALIFICATIONS & EXPERIENCE

• Certificate IV in Kitchen Management
• At least one year of relevant work experience

• Execute modern pub classics—like oversized parmigiana, burgers, signature platters, brunch items, vegan/vegetarian/gluten‑free options—following established recipes and presentation standards.
• Ensure every plate meets quality and taste standards consistently, with correct portion sizes, inspections, and presentation before service.
• Create seasonal or event‑driven specials (e.g. spicy brunch dishes, themed offerings) to align with Portside’s fun events like trivia, drag bingo, live music, and sports broadcasts
• Prepare mise en place: wash and chop vegetables, season proteins, preheat ovens/ovens or fryers, and ensure equipment is clean and stocked.
• Adhere strictly to local health and safety regulations: proper storage, temperature control, sanitisation of surfaces, utensils, and personal hygiene protocols.
• Efficiently manage simultaneous orders during busy periods—lunch specials, weekend bottomless brunch, nightly events—while maintaining speed and accuracy.
• Communicate and work collaboratively with kitchen hands, line cooks, wait staff, and bar team, especially during events and functions for up to 200‑people groups
• Help execute food service for special events hosted at the venue, including corporate lunches, private parties, birthdays, brunches, etc., ensuring smooth operations during high‑volume functions.
• Clean and sanitize cooking stations, utensils, grills, refrigerators and storage areas during and after shifts. Keep inventory stocked and kitchen organised.

  Pay: $75,000.00 – $95,000.00 per year
