Role Overview The Commis I – Pastry is responsible for preparing a wide range of breads, pastries, and baked goods by executing tasks such as dough preparation, proofing, baking, and decorating to meet daily production needs. This role supports the Pastry Chef and kitchen operations by following recipes, ensuring product consistency, maintaining food safety standards, and operating baking equipment safely. The position also contributes to a positive team environment and upholds high standards of quality, presentation, and professionalism. POSITION SUMMARY * Prepare breads, pastries, doughs, fillings, and baked goods according to recipes, production sheets, and presentation standards. * Proof, bake, finish, and decorate pastry items, ensuring consistent quality and portion control throughout the shift. * Safely operate baking tools and equipment, including mixers, ovens, proofers, and measuring devices; monitor appliance and food temperatures. * Maintain cleanliness and organisation of pastry workstations, tools, and storage areas in accordance with food safety and hygiene procedures. * Follow food safety handling policies, personal hygiene standards, and maintain required kitchen logs for compliance. * Inform the Chef of excess or unused food items to support planning of daily specials and reduce waste. * Support management with training, coaching, scheduling, and team motivation; serve as a positive role model within the department. * Uphold all company policies related to safety, security, uniform standards, and confidentiality; report accidents and unsafe conditions promptly. * Communicate clearly and professionally with colleagues; contribute to a respectful and productive team environment. * Perform physical tasks such as lifting up to 25 lbs, standing for extended periods, and working on uneven or slippery surfaces. * Carry out additional duties as assigned by Supervisors to support smooth pastry and kitchen operations. QUALIFICATION AND EXPERIENCE: * Technical, trade, or vocational school qualification in Cookery, Pastry, or Culinary Arts. * At least 2 years of related work experience in a pastry kitchen, bakery, or similar environment. * Strong knowledge of pastry preparation, dough handling, baking techniques, food safety, and HACCP‑aligned hygiene practices. * Ability to follow recipes accurately, maintain consistency in product quality, and work efficiently during high‑volume production. * Strong communication skills, a positive attitude, and the ability to work effectively within a team. * Must have legal working rights in Fiji.
