Key Responsibilities – Commis Baker Cruise Ship Duties & Fresh Baked Goods Preparation Assist in the daily production of bread, rolls, pastries, and desserts for all onboard dining locations, under the guidance of senior bakers and pastry leadership. Follow standardized recipes, portioning, dough handling, proofing, and baking procedures to deliver consistent quality and freshness. Maintain strict cleanliness of the bakery, ovens, and all work areas in accordance with USPH, HACCP, and company sanitation standards. Operate bakery tools and equipment safely, ensuring proper cleaning, sanitizing, and storage after use. Support ingredient preparation, storage organization, and assist with inventory processes such as stock rotation and receiving deliveries. Collaborate with team members to efficiently adapt to menu changes, dietary requests, and large-scale production schedules. Requirements – Cruise Ship Commis Baker: Entry-Level Bakery Skills At least 6 months of experience in a bakery, kitchen, food production facility, or related culinary setting; cruise or hotel experience is an advantage. Fundamental knowledge of baking methods, dough handling, portioning, and basic pastry preparation; dedication to learn and grow is encouraged. Understanding of food hygiene, bakery sanitation, and ingredient handling practices, with willingness to follow detailed procedures. Strong work ethic, reliability, and ability to thrive in a fast-paced, multicultural environment at sea. Effective English communication skills required to ensure safety and team coordination; additional language skills are a plus. Daily Tasks – Onboard Commis Baker: Bread, Pastries & Dessert Prep Set up bakery stations with proper utensils, ingredients, and protective gear to ensure smooth bakery operations from the start of each shift. Assist in measuring, mixing, kneading, and proofing dough for a variety of fresh baked goods prepared daily. Prepare and portion bakery items for buffets, restaurants, crew mess, and special pastries for events as assigned by superiors. Participate in routine cleaning of bakery equipment, ovens, and preparation surfaces to maintain compliance with maritime hygiene standards. Contribute to ingredient delivery checks, inventory controls, and maintain freshness and traceability of bakery supplies.
