Description

The Commis Chef – Chinese Cuisine is responsible for assisting in the preparation and production of authentic Chinese dishes under the guidance of senior chefs. This role requires a strong willingness to learn, attention to detail, and the ability to work efficiently in a fast-paced kitchen environment. The ideal candidate should have a basic understanding of Chinese cooking techniques and ingredients.

QUALIFICATIONS & REQUIREMENTS:

  • Minimum 1 year experience in a professional kitchen; exposure to Chinese cuisine preferred.
  • Culinary diploma or certification is an advantage but not required.
  • Basic knowledge of food safety and hygiene practices.
  • Passion for Chinese food and a strong willingness to learn and grow.
  • Ability to follow instructions and work as part of a team.
  • Physically fit, able to stand for long periods and work under pressure.
  • Flexible with working hours, including weekends and holidays.

Responsibilities
  • Assist in the preparation of ingredients (chopping, marinating, portioning) for wok, dim sum, roasting, or noodle sections.
  • Support the Chef de Partie and other senior chefs in daily kitchen operations.
  • Cook basic dishes under supervision, ensuring high quality and authentic taste.
  • Ensure all mise en place is prepared ahead of service time.
  • Adhere strictly to recipes, preparation methods, and portion control.
  • Maintain cleanliness and hygiene in work areas in accordance with food safety standards.
  • Properly store food items and monitor stock levels of ingredients.
  • Assist in receiving deliveries and checking quality and quantity.
  • Learn and apply traditional Chinese culinary techniques including stir-frying, steaming, braising, and roasting.
  • Perform other related duties as assigned by the chef team.
