COMMIS CHEF (FULL TIME) | MERCURE GOLD COAST RESORT

A 292-room hotel, spanning over 3.5 hectares of manicured gardens with significant food & beverage operations, two resort pools and extensive conference facilities, Mercure Gold Coast Resort is an oasis located amongst expansive gardens on the Gold Coast.
Overlooking the Resort’s pool and ninth Hole of the Palm Meadows Golf Course, The Green Dining and The Cart Bar and Kitchen are our two food and drink outlets ready to welcome our guests, in addition to extensive conference facilities and two stunning guest pools.
Job Description
This role will see you rotating through the Resort kitchens, working à la carte dinner, buffet breakfast, production and banquet shifts.

YOUR EXPERIENCE AND SKILLS INCLUDE:

  • Trade qualified (minimum Certificate III Commercial Cookery).
  • Previous experience in a commercial kitchen environment preferred; as to, an understanding of food safety requirements.
  • A genuine passion for food and displaying very high standards of production and presentation.
  • A working understanding of and the ability to maintain food safety standards.
  • Excellent communication skills and a high standard of grooming and personal presentation.
  • The capacity to multi-task and cope well under pressure.
  • While predominantly focused on breakfast, you have the flexibility to work a 7-day roster, with an availability to work varied shifts from early mornings, late evenings, including weekends and Public Holidays as per our business demands.
  • A reliable colleague who genuinely enjoys those early morning starts!

Responsibilities
  • Preparing and serving food for our breakfast buffet, ensuring freshness and quality are front of mind.
  • Prepare mis-en-place as required.
  • Ensure consistent great food production, in line with the high-quality standards set by the Resort.
  • Ensure strict stock rotation and minimum wastage and assist with ordering necessary food items.
  • Keep all working areas clean and tidy and ensure all equipment is maintained.
  • Contributing to ideas to keep our offerings varied and exciting for our guests.
