Tregenna Castle Resort in St Ives Cornwall, is looking for an experienced Commis Chef to join their brigade. We are a family Resort set in a 72 acre Estate overlooking the fishing village of St Ives. Busy all year round, we cater for our Hotel guests, Weddings and events, Proms, and Christmas parties to name a few. If you have a passion for food and a keen eye for detail, with a professional manner, we’d love to hear from you.
The job role is as follows:

Responsibilities
  • Prepare on a daily basis food requisitions as assigned.
  • Ensure that at all times food items for the restaurant are prepared on time and meet both quality and quantity standards
  • Perform duties common to Commis Chef position and other duties as assigned
  • Serving and carving of meats etc. behind the Carvery for guests.
  • Ensure freshness and suitability of products used by the section and that they are stored properly.
  • Control costs by minimising waste, correct storage procedures and exercising strict portion control
  • Ensure that cost control policies and procedures are followed
  • Maintain cleanliness in all assigned areas, including refrigerators and freezers
  • Reports any equipment on the section which needs repair or maintenance
  • Establish and maintain effective employee relations.
  • Inform on a daily basis the Department head all relevant information on operational matters
  • Undertake any relevant staff training deemed appropriate
  • Undertake any other duties deemed appropriate by the Executive Head Che
