Description
The Commis II (will be based in the Main Kitchen) plays an important role in supporting daily culinary operations by preparing ingredients, assisting with cooking tasks, maintaining workstation cleanliness, and ensuring food quality and consistency. This position handles intermediate‑level food preparation, follows recipes accurately, monitors food safety practices, and works closely with senior chefs to deliver high‑quality dishes. The Commis II contributes to an efficient and well‑organised kitchen while supporting a positive team environment and overall guest satisfaction. POSITION SUMMARY * Prepare and cook assigned food items following recipes, portion standards, and quality guidelines under the direction of senior chefs. * Assist with setting up and breaking down workstations for service; ensure all tools and equipment are clean and ready for use. * Complete intermediate food preparation tasks such as cutting, slicing, marinating, portioning, and assembling mise en place. * Safely operate kitchen equipment, including knives, ovens, grills, stoves, fryers, and other culinary tools. * Monitor and record temperatures of food items and kitchen equipment; report any abnormalities or safety concerns to Supervisors. * Maintain cleanliness and sanitation of the main kitchen, including preparation areas, equipment, utensils, and storage spaces. * Follow all food safety and hygiene procedures, ensuring compliance with HACCP and internal safety standards. * Assist in ensuring portion control, presentation quality, and consistency throughout service. * Inform the Chef of any excess prepared items or unused ingredients to support planning and reduce waste. * Communicate clearly, work collaboratively with team members, and contribute to a positive and respectful kitchen environment. * Follow company policies related to safety, security, uniform standards, and confidentiality; report accidents or unsafe conditions promptly. * Perform physical tasks such as lifting up to 25 lbs, standing for long periods, bending, reaching, and working on uneven or slippery surfaces. * Perform any additional duties as assigned by Supervisors to support smooth kitchen operations. QUALIFICATION AND EXPERIENCE: * High school or tertiary qualification in Cookery or Culinary Arts (preferred). * Minimum 1–2 years of experience in a commercial kitchen or food preparation environment. * Good understanding of basic to intermediate cooking techniques, food handling, and HACCP‑aligned hygiene practices. * Ability to follow recipes accurately, maintain consistency, and work efficiently during busy service times. * Strong communication skills, a positive attitude, and the ability to work effectively in a team environment. * Must have legal working rights in Fiji.   At Marriott International, we are dedicated to being an equal opportunity employer, welcoming all and providing access to opportunity.
