Key Responsibilities – Commis Pastry Cruise Ship Duties & Dessert Preparation Assist with daily preparation, baking, assembling, and presentation of a diverse range of pastries, breads, cakes, and desserts for all onboard venues under the supervision of senior pastry staff. Follow established recipes, portioning guidelines, and presentation standards to deliver consistent, high-quality pastry products. Maintain cleanliness and organization in assigned pastry and bakery work stations, ensuring compliance with USPH, HACCP, and cruise line hygiene regulations. Operate pastry and bakery equipment safely, cleaning and storing all tools and machines according to company safety procedures. Assist with ingredient measurement, scaling, mixing, baking, and decorating tasks as requested by team leaders or pastry chefs. Adapt to changing menus, guest dietary needs, special events, and large-scale production schedules as directed by the culinary leadership. Foster an inclusive team environment built on respect, collaboration, and support for all team members. Requirements – Cruise Ship Commis Pastry: Entry-Level Pastry & Bakery Skills Minimum 6 months of professional experience in a pastry kitchen, bakery, restaurant, or food service setting; cruise or hotel experience is an asset. Foundational pastry and baking skills, including mixing, dough handling, cake assembly, and basic decorating, with enthusiasm for advanced learning. Understanding of food safety, sanitation, and ingredient handling specific to pastries and bakery items; ready to comply with strict operational guidelines at sea. Dependable, adaptable, and able to perform effectively in a fast-paced, multicultural pastry team environment onboard a cruise ship. Effective English communication skills are required for safety and teamwork; additional languages are welcome but not mandatory. Daily Tasks – Onboard Commis Pastry: Pastry Prep, Baking & Service Set up pastry and bakery stations with all required ingredients, utensils, and equipment for efficient operation and production. Assist with preparation and baking of breads, croissants, cakes, cookies, mousses, and plated desserts for buffets, a la carte service, and special events. Support pastry and dessert assembly, garnishing, and artistic finishing touches, ensuring excellent visual appeal and gourmet quality. Participate in regular cleaning, sanitizing, and care of pastry kitchen equipment, refrigeration units, and preparation surfaces per hygiene standards. Assist with stock management, including ingredient checks, inventory counts, rotation, and safe storage of perishable products. Qualifications & Additional Details – Cruise Ship Commis Pastry Opportunities Willingness to live and work onboard a cruise ship for 6–8 month contracts, adapting to rapid pace, changing shifts, and life at sea. Valid passport and any required visas for international cruise assignments (for example, a US C1/D visa, if required). Must successfully complete an English language assessment and pre-employment medical examination, in accordance with maritime law and cruise line protocols.
