As a commis chef specializing in sushi, you will support the senior sushi chefs in preparing fresh, high-quality sushi and sashimi, maintaining cleanliness, and ensuring food safety standards. REQUIREMENTS:

• Previous experience in a kitchen, preferably in sushi or Japanese cuisine (internships or culinary school graduates welcome).

• Assist in the preparation of sushi, sashimi, maki, nigiri, and other Japanese dishes.
• Maintain high standards of food hygiene, cleanliness, and organization in all areas of the kitchen.
• Prepare ingredients by cleaning, cutting, and organizing fish, vegetables, and rice under guidance.
• Ensure all food is stored and handled in compliance with food safety and hygiene regulations.
• Assist senior chefs with mise en place and service prep.
• Learn and follow recipes, techniques, and plating standards.
• Keep kitchen equipment clean and in good working order.
• Follow instructions from senior kitchen staff and take feedback constructively.
• Maintain stock rotation and assist with inventory as needed.
