We are seeking a visionary Complex Food & Beverage Operations Manager to oversee and elevate the F&B operations across the Hilton Dubai Al Habtoor City, and V Hotel Dubai, Curio Collection by Hilton.
This is a rare opportunity to lead a diverse and dynamic portfolio of restaurants, bars, lounge and in-room dining services within these hotel brands — all under one roof.

Responsibilities

As the Complex Food & Beverage Operations Manager, you will lead the entire F&B function across Hilton and V Hotel. Your responsibilities will include, but are not limited to:

  • Oversee day-to-day operations of all restaurants, bars, lounges, and in-room dining across the three hotels to ensure excellence in service delivery and guest satisfaction.
  • Ensure all F&B outlets meet or exceed brand standards, consistently delivering high-quality food, beverage, and service experiences.
  • Develop and implement strategic plans and departmental goals that align with the hotels’ overall business objectives.
  • Drive revenue growth through creative promotions, menu engineering, upselling strategies, and outlet optimization.
  • Collaborate with Executive Chefs and outlet managers to innovate menus and introduce seasonal and signature offerings in line with market trends and guest preferences.
  • Establish and monitor SOPs (Standard Operating Procedures) for all outlets, ensuring consistent training, implementation, and quality assurance.
  • Lead, mentor, and develop a large, multicultural team across the complex—fostering a culture of accountability, engagement, and continuous improvement.
  • Monitor guest feedback across platforms and work proactively with teams to address concerns and implement service recovery strategies.
  • Manage departmental budgeting, forecasting, cost control, and profitability analysis across outlets and services.
  • Ensure strict compliance with Dubai Municipality health, safety, hygiene, and food handling regulations, as well as licensing requirements.
  • Conduct regular audits of outlets to maintain operational excellence and identify opportunities for improvement.
  • Work closely with Procurement and Supply Chain teams to ensure quality, cost efficiency, and sustainability in purchasing.
  • Collaborate with the Marketing and Communications team to develop and execute F&B campaigns and promotions that enhance brand visibility and drive traffic.
  • Actively participate in management meetings, providing strategic insight and reporting on F&B performance and initiatives.
  • Represent the F&B department during hotel inspections, audits, and stakeholder visits.
