JOB DESCRIPTION

Complete and prepare food service items in a timely manner ensuring that food quality, consistency and presentation meet or exceed member expectations. Execute standard recipes and standard procedures for production and presentation of food service items. Ensure orders are prepared according to the chit and in a timely fashion as well as ensuring food is delivered in a proper manner with all necessary garnishes. Ensure food presentation and quality is at the expected standard set by management.

Responsibilities

KEY RESPONSIBILITIES AND DUTIES

  • Adhere to the limits of authorized policies, procedures, programs and budgets
  • Prepare and cook meals for all food service areas of the Club and for catered events either internal or external
  • Prepare and assist with the cooking for banquet functions
  • Review function sheets and prepare food service items accordingly
  • Prepare staff meals as required
  • Maintain a clean and sanitary work area and storage
  • Responsible for cleaning and sanitizing of workstation, including but not limited to, counter tops, fridges inside and out, food pass shelving throughout the shift and at closing
  • Prepare stocks and sauces
  • Assist with preparation of list of supplies for next shift
  • Receive inventory, when necessary, and store in appropriate places
  • Promptly report any and all accidents or injuries and unsafe conditions in the kitchen
  • Assist with the checking of quantity and quality or incoming produce and supplies
  • Ensure all security procedures with respect to kitchen inventory are completed
  • Assist with training of 2nd Cook, 3rd Cook, and Kitchen Helper training
  • Advise server/bartending staff of daily specials
  • Preparation of menu items for banquets and daily menu in a timely manner
  • Adhere to club policies and procedures

EXPEDITOR STATION RESPONSIBILITIES AND DUTIES

  • Ensure food quality, presentation and temperature are maintained with all dishes leaving the kitchen
  • Ensure all special requests are communicated to all line cooks, including any allergies
  • Ensure food runners and servers know where food is to be delivered
  • Ensure accuracy of orders as they appear on the chit and correct as necessary
  • Ensure expeditor station and expeditor fridge are kept clean, rotate ingredients accordingly and inform management when an ingredient is low so it may be re-ordered
  • Understand, oversee and monitor timing of chits
  • Anticipate and catch errors and mitigate prior to any becoming an issue, ensuring all dishes are consistent with menu standards
  • Ensure all takeout orders are checked to verify the order corresponds with what has been ordered
