QUALIFICATIONS & ESSENTIAL SKILLS:

  • Diploma in Commercial Cookery or at least 3 years of relevant experience.
  • Minimum 1 year of commercial kitchen chef experience.
  • Proven ability to manage kitchen operations in a fast-paced environment.
  • Strong knowledge of food safety practices, cost control, and inventory management.

QUALIFICATIONS & ESSENTIAL SKILLS:

  • Certificate III in Commercial Cookery (or equivalent) plus 2 years of on-the-job experience, OR Certificate IV in Commercial Cookery.
  • Demonstrated knowledge of food safety and hygiene practices.
  • Minimum 1 year of commercial kitchen experience.

Responsibilities

KEY RESPONSIBILITIES:

  • Collaborate with the Head Chef to design seasonal menus, forecast ingredient requirements, and manage purchasing within budget.
  • Supervise food preparation, cooking, and plating to ensure consistency, quality, and timely service.
  • Liaise with kitchen and front-of-house teams to coordinate service and resolve operational issues.
  • Oversee the use of cooking equipment, ensuring correct temperatures and safe operation.
  • Prepare dishes in accordance with dietary requirements and customer preferences.
  • Maintain correct storage of all food items, including temperature control and rotation.
  • Monitor kitchen hygiene standards, ensuring compliance with food safety regulations and internal policies.
  • Staff training and mentoring to uphold service and quality standards.
  • Maintain accurate records of stock usage and order requirements.
  • Perform any additional tasks as directed by the Head Chef to ensure smooth kitchen operations.

KEY RESPONSIBILITIES:

  • Prepare and cook a variety of dishes from the Caness’s menu, as well as special and seasonal items.
  • Ensure food is prepared and presented to the highest standard, maintaining flavour, quality, and visual appeal.
  • Follow established recipes and portion control standards while maintaining efficiency.
  • Maintain cleanliness and hygiene throughout all kitchen areas.
  • Assist in stock rotation and storage to minimise waste and control costs.
  • Work collaboratively with other kitchen staff to ensure smooth service during busy periods.
  • Train junior staff in food preparation techniques and kitchen safety procedures.
  • Contribute ideas for new dishes and assist with their development and testing.
