Measures and mixes ingredients accurately. Reviews any modifications to recipes to meet quality standards with Cook 2, Sous Chef or Chef. Observes and tests food being cooked by properly taste testing and taking food temperatures using proper ServSafe procedures and guidelines. Food preparation and cooking skills include but are not limited to: measuring, washing, peeling, cutting, grilling, baking, roasting, broiling, steaming, carving and portioning foods. Monitors food quantities and quality during the meal period in a menu, buffet or display cooking setting. Maintains a cleaning schedule to assure work areas are kept clean and sanitary. Assures kitchens and related areas are set up and cleaned up using established cleaning guidelines and checklists. Practices the proper operation of equipment to ensure personal safety and avoid damage to equipment. Responsible to assure proper records are maintained for food production and ordering within the food management system. Follow Willow Valley’s HACCP plan and all related food safety policies and procedures.
