Job Description
Rixos Marina Abu Dhabi is seeking an experienced Cost Controller to join our dynamic Finance team. This role is ideal for a detail-oriented professional who thrives in a fast-paced, high-volume hospitality environment. You will play a key role in optimizing costs, supporting financial controls, and contributing to the overall profitability of our all-inclusive operations.

Responsibilities

ABOUT THE ROLE:

Reporting to the Director of Finance, the Cost Controller will manage all aspects of food and beverage cost control and analysis. You will coordinate with procurement, stores, and kitchen teams to monitor inventory levels, validate invoices, and ensure accuracy in pricing and costing. Your role is essential in delivering timely reports, conducting internal audits, and ensuring compliance with company policies and ISO standards.

KEY RESPONSIBILITIES:

  • Manage and control costs across all F&B outlets, ensuring alignment with budget goals
  • Manage and control costs related to All Inclusive concept and cost transfers from all other outlets participating in All Inclusive package plans.
  • Monitor inventory movements and ensure accurate stock levels for food, beverage, and supplies
  • Verify receiving documentation, supplier invoices, and ensure pricing aligns with market lists
  • Prepare daily and monthly F&B cost reports, outlet P&Ls, and performance analysis
  • Support month-end closings, inventory counts, and internal control procedures
  • Collaborate with Culinary and F&B teams to cost recipes and analyze menu profitability
  • Assist in implementing audit procedures and cost-saving initiatives
  • Ensure compliance with ISO IMS standards, including Food Safety and Environmental Management
