Job Description Constance Ephelia, our luxury resort destination in Seychelles, is seeking a talented and detail-oriented Demi Chef de Partie to join our fine dining kitchen brigade. In this pivotal role, you will work alongside our culinary team to deliver exceptional gastronomic experiences, demonstrating precision, creativity, and professionalism in every dish that leaves our kitchen. The successful candidate will be instrumental in maintaining the highest standards of fine dining cuisine whilst contributing innovative ideas to our evolving menus. Specialise in your assigned station (partie), developing expertise and efficiency whilst maintaining meticulous attention to detail Prepare and cook food items to the exacting standards required in a fine dining environment, ensuring consistency in taste, presentation, and quality Collaborate effectively with the kitchen brigade, supporting senior chefs and contributing to a cohesive, professional working environment Execute classical and contemporary cooking techniques with precision, demonstrating mastery of knife skills and food handling practices Maintain rigorous food safety and hygiene standards, adhering to all health and safety regulations and organisational protocols Assist in menu development and refinement, offering creative suggestions whilst respecting the head chef's vision Manage mise en place and station organisation to ensure smooth service and optimal workflow Monitor food costs and minimise waste without compromising quality or presentation standards Support the induction and training of junior kitchen staff, sharing knowledge and best practices Work efficiently under pressure during service, maintaining composure and delivering excellence consistently Contribute to the overall success of the kitchen operation through reliability, dedication, and a commitment to culinary excellence Qualifications Job requirements: Thorough understanding of food safety, hygiene regulations, and HACCP principles Demonstrated expertise in food preparation, plating, and presentation to fine dining standards Strong knife skills and proficiency in food handling and preparation methods Excellent organisational and time management skills, with the ability to prioritise effectively Strong people skills and the ability to work collaboratively within a professional kitchen brigade Attention to detail and commitment to consistency in all culinary outputs Ability to work under pressure whilst maintaining quality and professionalism Good communication skills and a willingness to receive feedback and guidance Experience working in award-winning or internationally recognised fine dining establishments Knowledge of international cuisines and diverse culinary traditions Experience in menu development and food costing Supervisory or mentoring experience with junior kitchen staff Familiarity with tropical or island cuisine Understanding of waste management and sustainability practices in professional kitchens Relevant food safety or culinary certifications Additional Information WORK WITH CONSTANCE 🌿 Join a team where well-being, career development, and collaboration are at the heart of everything we do.
